I've been having a serious craving for comfort food lately - mostly in the form of banana bread goodness.  I'm also the type of person who will modify a recipe to make it healthier.  It's like a challenge, just how healthy AND delicious can you make a baked good?!  The answer is very.

I whipped this up this morning with some simple ingredients I had around my kitchen after pouring through about a dozen Pinterest recipes that didn't really meet my standards.  And it turned out so well I thought I'd share with you as well!

Gluten Free Banana Blueberry Bread

Ingredients:

  • 4 ripe bananas, mashed
  • 2 eggs
  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 2 cups Bob's Red Mill gluten free 1:1 baking flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 3/4 cup frozen blueberries

Preheat oven to 350F.  Whisk eggs with coconut oil and maple syrup then mix in mashed ripe bananas.  In a separate bowl mix together the gluten free flour, baking powder, baking soda and sea salt.  Combine wet and dry ingredients together gently until incorporated.  Add in frozen blueberries.  Transfer mixture to a greased 9x9in glass pan and bake for 35 minutes or until toothpick inserted into the centre of the bread comes out clean.

You can also make muffins or use a loaf pan for this recipe, just be careful with your baking time.  Muffins will take less time while a loaf pan may take a bit more time to cook fully through.  Just keep monitoring them.

It can be so simple to whip up a healthy snack!  Or you could even slather a piece with 1 tbsp of a natural nut butter to add a bit more protein and have for breakfast.
